The Food Services and Restaurants Business Data Model: AI-Ready Edition is for business and enterprise architects who need to know what information restaurant and food service work runs on before an AI agent touches it. It covers 14 subject areas, 116 entities, 811 key attributes and 356 relationships. Every entity and key attribute is classified for sensitivity, with the AI uses and data-quality requirements an agent depends on. It holds the 93 entities shared by retailers and restaurant companies and the 23 specific to restaurant and food service companies, from Retail and Restaurants Business Architecture Reference Model: AI Transformation Blueprint.
What's Inside
The same model comes in three files: the full model in Word, a workbook to filter and extend, and a guide to the scales and the license.
- 14 subject areas and 116 entities, each with a definition, its typical system of record, sensitivity class, AI uses and data-quality requirements
- 811 key attributes with sensitivity and AI relevance, and 356 relationships with cardinality
- Under each entity, the capabilities that need it and the agents that read it, by name and ID
- The Business Data Model (Word): every subject area and entity in full
- The workbook (Excel): subject areas, entities, attributes and relationships in sheets you can filter and extend
- The guide (Word): the scales the model refers to, the data foundation, and the license
- Free corrections, and new versions free for 180 days
Every file names your organization and carries your license ID.
The 14 Subject Areas
The 116 entities are grouped into 14 subject areas. The list gives what each holds and how many entities it has.
- Location Network and Development (9 entities): The locations the organization trades from, the formats they follow and the groups they are managed in, the sites and trade areas assessed for new locations, and the projects that open, remodel, relocate or close them.
- Location Operations and Labor (6 entities): The work a location does each day: opening and closing, the tasks sent to it, the labor deployed against demand within the schedules the enterprise model holds, customer counts, and the visits its managers make.
- Sales Transactions and Cash (9 entities): What happens at the point of sale: each transaction and its lines and tenders, register exceptions, age checks for age-restricted products, and the cash counted, deposited and reconciled at each location.
- Item Range and Prices (7 entities): Which items each location offers and at what price: the authorization of items to locations, price zones, the price rules a pricing team sets, each price change on its way to the location, the competitor prices observed and the checks that the price shown is the price charged.
- Promotions, Markdowns and Coupons (6 entities): How promotions and markdowns run at locations and online: the offers in each promotion event, their set-up at locations, the results measured, the markdowns taken to clear stock, and coupon redemptions.
- Location Inventory and Replenishment (9 entities): The stock each location holds and how it is replenished: inventory positions and counts, out-of-stocks, the location demand forecast, the replenishment parameters, the orders and transfers that move stock to locations, delivery schedules and receipts.
- Online Orders and Fulfillment (11 entities): Orders customers place online, in the app or through third-party platforms, and how locations fulfill them: carts and visits, the location assigned, capacity slots, substitutions, pickup handoffs, local delivery, platform orders and the platforms' settlement statements.
- Returns, Reviews and Service Recovery (5 entities): What customers send back and say: returns at locations and online, the disposition of returned items, price adjustments after purchase, the service recovery a location gives, and the reviews customers publish.
- Loyalty and Stored Value (8 entities): The loyalty program and the value customers hold with the organization: program rules, points transactions, rewards, member offers, account reviews, gift cards, refund credits and the ledger of stored value.
- Franchise (8 entities): The franchise system: applicants and franchisees, the franchise and development agreements, the sales franchisees report, the royalty statements calculated from them, the business reviews and the default cases.
- Food and Product Safety at Locations (8 entities): Keeping food and products safe where customers buy them: each location's food safety plan, the checks and temperature logs against it, date checks, product holds, recall tasks at locations, health inspection results and reports of customer illness.
- Audits, Shrink and Loss Prevention (7 entities): How the organization finds and reduces loss at its locations: location audits and their findings, loss exception alerts, theft incidents, shrink events and results, and loss investigations.
- Menu and Recipes (11 entities): What a restaurant company serves and how it is made: menus and menu items, modifiers, recipes, approved ingredients, allergen and nutrition statements, menu concepts and tests, recipe changes and food cost variances.
- Kitchen, Dining and Catering (12 entities): How a restaurant runs service: kitchen stations and tickets, prep plans and waste logs, tables, reservations, waitlists and checks, service times, catering orders, contract food service and commissary production.
Who Uses It
Data owners and stewards, data architects, and AI and analytics engineers who need to know what an agent may read, how sensitive it is and how good it must be first; and business architects who link capabilities to data.
How It Fits With the Other Products
The capabilities named under each entity are defined in the Retail and Restaurants Business Capabilities Map: AI-Ready Edition. The agents are specified in Retail and Restaurants Business Architecture Reference Model: AI Transformation Blueprint, which contains this data model and adds the value streams, use cases, controls, an operating model and a roadmap. The Food Services and Restaurants Value Streams are sold on their own too.
